Chocolate, Cinnamon, & Chia Seeds Muffins

Muffins are an easy dessert to prepare and everyone loves them. I have introduced many recipes for making muffins. This recipe is a nice one using chia seeds gel and coconut oil. I also like to frost with an easy chocolate frosting to give this dessert even more chocolate.

Ingredients:
1 ½ cups all-purpose flour
1/2 cup cocoa powder
1 tbs baking powder
1/8 tsp salt
1/2 tsp ground cinnamon
1/4 cup sugar
1/4 cup brown sugar
2 eggs
1 cup milk
2 tbs chia seeds gel*
4 tbs coconut oil, melted
Chocolate frosting ingredients:
1/2 cup semisweet chocolate chips
1/4 cup milk
1 ½ cups confectioners' sugar

Directions:
Preheat oven to 350°.  Line a 12 muffin tin with paper liners and set aside.

In a medium bowl, sift together flour, cocoa powder, salt, baking powder, and both sugars and set aside.

Using a handheld mixer, beat eggs, milk, chia seeds gel, and coconut oil. Make a well in the center of the dry ingredients and pour the egg mixture into the well. Stir gently until just combined (do not overmix the batter).







Spoon the batter 2/3 full into the paper liners. Bake in the preheated oven for 25 minutes. Let the muffins cool completely before frosting.




To make chocolate frosting:
Bring milk to simmer. Add chocolate chips and stir constantly until melted. Remove from heat and stir in the confectioners' sugar. Whisk until smooth. Spread the frosting on top of the muffins.


 
 

*To make chia seeds gel:
Mix 2 tbs chia seeds with 1/2 cup water. Use chia seeds gel in many recipes to replace ingredients with a high fat content.
