No-Knead Rosemary Focaccia for Two

Since I started making no-knead bread, I like this concept which does not need a bread machine or kneading the dough. The NuWave® oven is another kitchen gadget that makes life easier. This herb bread is about the perfect size for a serving two people.  What I like about this “no-knead bread" is only requires the necessary time for Mother Nature to make the dough rise. I can make smaller or bigger portions. Therefore, I can control my weight because no one can resist the warm, crusty bread that comes out from oven. This recipe can easily be turned into excellent pizza dough. Use any kind of cheese topping, and then you have a homemade pizza.

Ingredients:
Dough Ingredients:
1 1/2 cups bread flour
1/8 tsp active yeast
1 tsp salt
1/2 tsp sugar
2 tbs olive oil
1/2 cup water
Topping ingredients:
1 tbs olive oil
2 tbs freshly grated Parmesan cheese
1 tbs fresh chopped rosemary
1 tsp chopped garlic
1/2 tsp salt

Directions:
In a mixing bowl combine all the bread ingredients and stir well. Cover with plastic wrapper and leave it on the warm place for 8 to 12 hours. So if you want to serve this bread at dinner, start the dough in the morning.
Here it is how the dough looks after 8 to 10 hours.

When dough is ready, mix 2 tbs of flour and 2 tbs cornmeal. Sprinkle some of this mixture on a 6 inch baking sheet. Sprinkle the rest of the flour on the countertop to shape the dough. Dust your hands with some flour and pick up the dough from the bowl and place onto the baking sheet. Use you fingers to make some dimples on the dough.

Brush the olive oil over the dough. Add the cheese, garlic, and rosemary. Cover the baking sheet with a kitchen towel and let rise for 1 to 2 hours.

Bake in a NuWave® oven set to 400° for 15 minutes. Let cool for 5 minutes before cutting the baked dough into wedges. Serve warm or at room temperature. It is best to eat this bread the day it is baked.
