Stuffed Mushrooms with Turkey Sausages

I love stuffed mushrooms, and there are many recipes available for making stuffed mushrooms. I will introduce an easy and economical stuffed mushrooms recipe to add into my blog for healthy eating. My stuffed mushrooms will not use breads or cheese and the taste will be a Asian/Western combination. As many studies have shown that mushrooms are a rich source of powerful nutrients for the body’s daily needs.  Mushrooms are also low in calories, fat, and are gluten free. Some people don't like mushrooms, but I do not know why. I think those people are missing the best food source that they can add to help living a longer life.  Here is the simple recipe to make a healthy dinner in a flash.

Ingredients:
20 large button mushrooms, wiped and cleaned with a paper towel and stems removed from caps
Stuffing ingredients:
1 tbs olive oil
2 garlic cloves, minced
½ lb. ground turkey sausage
1/4 cup finely chopped onions
1/4 cup finely chopped celery
All the removed mushroom stems, chopped
1/4 finely chopped red bell pepper
1 cup spinach, blanched and chopped
1 egg
1 tsp salt
1/4 tsp black pepper
1 tsp sugar
Juice of 1 lime

Directions:
In a medium skillet, add oil. Stir in onions and garlic. Cook until fragrant (about 1 minute). Add chopped mushroom stems. Sauté for 2 minutes.



Add the rest of the vegetable ingredients and cook until all are wilted.

 Remove and let cool.

In a mixing bowl add turkey, egg, and all the cooled vegetables. Mix well. Season with salt, soy sauce, sugar, pepper, and lime juice.

Put the stuffing into each mushroom cap where the stems were removed.

Place the stuffed mushrooms on a baking dish. Drizzle some more oil over the stuffed mushrooms and bake in a preheated oven set to 350° for 20 to 30 minutes.

 Serve.
