Cuban Baked Drumsticks with Vegetables

Sometimes, a one-pot meal is easy to prepare for the family. Get out of the habit of preparing boring grilled or BBQ drumsticks and try seasoning the drumsticks with the Cuban flavor sauce with cumin and a lot of garlic. I use a NuWave® oven for this recipe, but a countertop oven or regular oven will work. Butternut squash adds a sweet flavor to the drumsticks. This easy healthy meal will satisfy all the hard food critics.

Ingredients:
6 drumsticks, washed and drained
1 green or yellow bell pepper
1 cup of butternut squash, peeled and cut into 1 inch pieces
Cuban sauce ingredients:
1/2 cup fresh orange juice
1/2 cup chopped cilantro
1 tsp cumin
3 garlic cloves, minced
1 tsp salt
1/4 tsp black pepper
1/4 tsp smoked paprika
2 tbs fresh or 1 tsp dry oregano
2 tbs olive oil

Directions:
Wash and cut the bell pepper. Remove the seeds and the membranes from the bell pepper. Cut the bell pepper the same size as the butternut squash.



You can remove the skin from the drumsticks for a healthier choice. 
Combine all the Cuban sauce ingredients and mix well.
Line a baking pan with foil and place the vegetables on the bottom. Lay the drumsticks on top. Add the Cuban sauce over.

I set my NuWave® oven to 350°, but you can preheat your oven to the same temperature. Bake for 15 minutes. Remove the baking pan and do a quick stir.
 

Return the drumsticks back into the oven and bake for another 15 minutes or until the juice that comes out from the drumsticks are clear. Serve with rice or bread.
