Creamy Salmon Soup

 Ingredients:

8 oz. salmon fillet, cut bite size pieces

1 potato, peeled and cubed

1/4 cup white onion, minced

1 small carrot, peeled and cubed

2 1/2 cups fish broth or vegetable broth

1/4 cup heavy cream or coconut milk

Seasonings:

1/4 tsp each of salt, pepper,cumin, coriander, fennel seed

Garnish with 2 tbs fresh chopped dill

Serve with crouton or cracker.

Directions:

In medium saucepan, add 1/2 tbs of oil. Stir in the seasonings and onions. Stir and cook until fragrant (about 2 minutes). Add broth. 

Bring broth to boil, then add potato and carrot. Cook for 10 minutes.

Add salmon and simmer for 5 minutes. Pour cream into the pot and bring it back to boil. Turn heat off.

Sprinkle with dill.
