Sometimes, figuring out the main dish is a
problem. However, soup is the only dish
that comes to mind when I have no ideas for cooking. Especially when the weather is chill outside,
a bowl of soup is a comfortable idea.
Soup is always an easy way to satisfy for a quick dinner, especially
with a small side dish such as garlic bread or a simple side salad. Today, I will share one of my favorite soups,
potato mushroom soup. This soup is tasty
and has all the nutrition needed for a quick meal.
Ingredients:
2 potatoes
3 slices of bacon, chopped
8 oz. mushrooms, sliced
2 garlic cloves, minced
1/2 white onion, diced
1 tbsp butter
2 cups chicken broth
2 cups heavy cream
Seasoning with the following:
Salt, pepper, Italian seasoning, and old
bay seasoning
Directions:
Peel, wash and cut potatoes into cubes.
Melt butter in a medium pot over
medium-high heat. Add chopped bacon. Add garlic and onion and saute until
fragrant.
Add potatoes and stir well. Add mushrooms and continue to cook for 5
minutes. Start the seasoning with salt,
pepper, Italian seasoning, and old bay seasoning.
Add chicken broth and bring to a boil. Cook for 10 minutes or until the potatoes are
cooked. Add heavy cream and bring to a
boil for a few minutes. Turn off the
heat.
Sprinkle with fresh parsley.
