Sautéed Mushrooms with Garlic and Chili

 Mushrooms are a versatile and nutritious option for vegetarians. They are packed with fiber, protein, and antioxidants.  They provide health benefits such as reducing the risk of Alzheimer's disease, heart disease, cancer, and diabetes.  Low in calories and fat, mushrooms are perfect for guilt-free indulgence.  Today’s recipe is a quick and flavorful vegetarian dish for busy days.

Ingredients:

Mushrooms:

  • 7 oz. enoki mushrooms
  • 3 oz. white beech mushrooms

Ingredients For blanching:

  • 1/4 tsp of salt
  • 1/4 tsp of sugar

Aromatics:

  • 1 tsp minced garlic clove
  • 1 tsp minced ginger
  • 1 shallot sliced

Ingredient For stir-frying:

  • 2 tbsp oil

Sauce Ingredients:

  • 3 tbsp ketchup
  • 2 tbsp sriracha
  • 1 tsp mushroom seasoning powder (or vegetable bouillon powder)
  • 1 tsp Korean chili powder
  • 1 tbsp soy sauce
  • 1/4 tsp salt
  • 1 tbsp sugar
  • 1 tbsp vinegar
  • 1/2 cup water
  • 1 tsp cornstarch

Garnish Ingredient:

  • 2 green onions, thinly sliced

Directions:

1.    Preparing the Mushrooms:

·         Trim the stems from the enoki and white beech mushrooms.

2.    Blanching the Mushrooms:

·         Bring water to a boil in a pot and season it lightly with salt and sugar.

·         Add the mushrooms and blanch for 2 minutes.  Drain and set aside.

3.    Making the Sauce:

·         In a small bowl, combine ketchup, sriracha, mushroom seasoning, chili powder, soy sauce, salt, sugar, vinegar, water, and cornstarch.  Set aside.

4.    Sautéing the Aromatics:

·         Heat oil in a non-stick pan over medium heat.

·         Add the minced garlic, ginger, and diced onion—Sauté for about 2 minutes or until fragrant.

5.    Cooking the Sauce:

·         Pour the prepared sauce into the pan.  Bring it to a boil, then reduce the heat and simmer until the sauce thickens slightly.  Adjust the seasoning to taste.

6.    Combining and Finishing:

·         Add the blanched mushrooms to the pan and toss gently to coat them evenly with the sauce.

·         Cook for 1–2 minutes, then turn off the heat.

7.    Serving:

·         Garnish with sliced green onions and serve hot with steamed rice.
