Quick Poppy Seed, Almond, and Fig Bread

Ingredients:

  • 2 cups self-rising flour (or substitute with 2 cups all-purpose flour + 2 tsp baking soda)
  • 3 large eggs
  • 2 tbsp poppy seeds
  • 1/3 cup roasted almonds, chopped
  • 1/3 cup dried figs, chopped
  • 1 cup milk
  • 1 cup sugar
  • 1/3 cup cottage cheese
  • 1/3 cup vegetable oil
  • 1 tsp almond extract
  • 1 tsp vanilla extract
  • 1/4 tsp ground nutmeg

Directions:

1.    Preheat your oven to 350°F (175°C).

2.    Line a 9 in. x 5 in. loaf pan with parchment paper.

3.    In a medium mixing bowl, combine all ingredients until well blended.

4.    Pour the batter into the prepared loaf pan, spreading it evenly.

5.    Bake for 50 minutes or until a toothpick inserted into the center comes clean.

6.    Allow the loaf to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Tips:

  • If you don't have self-rising flour, replace it with 2 cups of all-purpose flour and add two teaspoons of baking soda.
  • Feel free to experiment by swapping figs with other dried fruits like raisins or apricots.
  • You can make an orange glaze for this recipe:
  • 1/2 cup orange juice 2 cups powdered sugar and mix well. You can add vanilla and almond extract to enhance flavor
