Baked Tuna with Balsamic Vinaigrette

Among the many easy recipes that I posted for years, the one today is my favorite. A reader will find all the ingredients are available to most cooks. I suggest that balsamic vinaigrette is one of the ingredients that we should have in our kitchens.  Buy quality balsamic vinaigrette and add a few more ingredients to create a good dressing for salads and also for making a quick marinade for simple healthy meals. Comfort food is what I grew up with. I will share this concept with the readers. Always spend a little time in the kitchen to bring a lot more into our busy lives.

Balsamic Vinaigrette Ingredients:
1/4 cup good balsamic vinaigrette
2 garlic cloves, minced
2 tsp honey or brown sugar
2 tsp Dijon mustard
3/4 cup olive oil
Tuna Ingredients:
Two 6 oz tuna fillets
1/3 cup balsamic vinaigrette
Juice of one lemon or lime
1/8 tsp black pepper
1/4 tsp salt
1 tbs fresh chopped parsley
1 tsp fresh chopped rosemary
1/2 cup total of sliced olives and artichokes
1/2 cup sliced onions

Directions:
To make vinaigrette:
Place all the balsamic vinaigrette ingredients in a glass jar with a screw-tight lid; Shake well.
To make the marinade:
In a bowl, combine vinaigrette, salt, pepper, and fresh herbs. Mix well.
Place tuna in a baking pan. Top with onions, olives and artichoke. Divide the marinade for tuna. Refrigerate for an hour.
 

Bake in a preheated oven set to 375° for 20 minutes. This recipe can be grilled outdoors or on a kitchen stove top burner.
Serve with salad of your choice.
