Scallion and Cheese Muffins

Freshly baked muffins look so tempting for adults and also for children. The good thing about making muffins is that they are so easy to make and can be elegant as a centerpiece at a party or simply a treat as an afternoon snack or a good breakfast treat. My herbs garden still has a lot of scallions, and they gave me an idea how to use them for recipe. The easy part is that most of the ingredients are probably readily available for most households. I use the Kirkland cheese, but any kind of cheese will work.

Ingredients:
Dry ingredients:
2 cups all-purpose flour
1 tbs baking powder
1/2 tsp salt
1/4 tsp cayenne
1/8 tsp black pepper
1 tbs sugar
Wet ingredients:
2 eggs
1 cup buttermilk
1/3 cup melted butter
1 cup Mix Kirland cheese
2 slices American cheese cut into 12 pieces
1/2 cup sliced scallions

Directions:
Preheat oven to 400°.
Line a 12 muffin tin pan with muffin tin paper liners.

Sift together the dry ingredients in a mixing bowl and stir in cheese and scallions.

In another bowl, beat eggs, milk, and melted butter.



Make a well in the center of the dry ingredients and pour the egg mixture onto the center of the dry ingredients. Stir gently until combined.

Spoon the batter 2/3 full into the paper liners; top with American cheese.



 Bake for 20 minutes or until golden brown. Serve warm.
