Turkey Chop Suey

Chop Suey is one of my favorite stir-fry dish that I like to make in a short notice. This dish is very versatile because the ingredients could be lying around in the refrigerator. In Asian homes, we had cooked rice and chop suey is one of  the dish will finish that cooked rice in a healthy way instead of fried rice. Most of the vegetables can be use to make chop suey too.

Ingredients:
1 lb skinless, boneless turkey breast thinly sliced
1 tbsp dry sherry
1  tbsp cornstarch
1/2 tsp salt
Oil for stirfry
Vegetables:
1/2 onion, chopped
2 garlic, minced
1/2 cup slice celery
1/2 cup slice carrot
1 cup slice mushrooms
1 cup total of red, green bell pepper,
1 cup Napa cabbage
1 cup beansprout
Stir-fry sauce
1 cup chicken broth
1 tbsp soy sauce
1 tps sugar
1/2 tsp salt
2 tbsp rice vinegar
1  tbsp cornstarch\
Garnish with green onions and cilantro
 

Directions:
In  a bowl place turkey, sherry and corn starch. Mix well and marinate for an hour


Prepare vegetables and set aside 

Mix the stirfry sauce in a bowl and set aside
blanch the carrots and celery in a hot boiling water for a minutes. Drain
Heat oil and fry the onions and garlic until fragrant.

 Add turkey and stir-fry for minutes add the carrots, celery, bell peppers and mushrooms.



Cook for 2 minutes. Add sauce and bring to boil.

 Add Napa Cabagge and bean sprouts.

 Make quick stir to combine. Throw in green onions. Serve with rice and top with chopped cilantro
