Apple-Zucchini Streusel Cake

Sometimes when the ingredients are not enough to create a meal from them, I always seem to find the way to finish them – like the recipe for this cake today.  I had one small zucchini left, and it is not enough to make zucchini bread or muffins.  I am also using some of my Granny Smith apples to make a coffee cake. The combination of these ingredients is more fantastic than I had imagined.  I add some chocolate chips to this recipe to make this one very special cake.

Ingredients:
Dry ingredients:
2 cups all-purpose flour
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1/2 tsp pumpkin spice
1 cup fine sugar

Wet ingredients:
2 eggs
1/2 cup vegetables oil
1 cup zucchini
1 cup apples, peeled ,shredded
2 tsp vanilla
1/2 cup applesauce
Streusel topping ingredients:
2/3 cup oatmeal
1/4 cup brown sugar
1/4 cup softened butter
1/2 tsp cinnamon
1/4 cup chocolate chips

Directions:
Preheat oven to 350°.  Grease and flour an 11” x9” baking pan and set aside.

To make streusel:
Combine all the streusel ingredients in a bowl and use a fork to mix them together or your fingers to toss ingredients well. Set aside.


Combine the dry ingredients in a bowl and whisk them a few times.

Combine the wet ingredients in a bowl and use a handheld electric mixer to beat them well. 


 Add zucchini, apples, and vanilla.  Mix well.
Add the wet ingredients mixture into the combined dry ingredients. Use a spatula to toss them until well mixed.

Pour into the prepared baking pan, top with the streusel and bake in the preheated oven for 45 minutes or until an inserted toothpick comes out clean.
