Ingredients:
1 roasted chicken from Costco or Sam's Club
1 bag of ready-made Pho spice from Pho Hoa
or your choice in the market now.
1 cup of daikon, carrots, celery, cabbage,
and zucchini.
300-gram fresh noodles.
Seasonings:
Fish sauce, chicken powder, sugar and salt.
On the side:
Beansprouts, Thai basil, cilantro, lime
wedge, chilis and hoisin sauce.
Onions sliced for garnish
Directions:
Separate some of the meat from the roasted
chicken for later use. If you want to serve 2 or more people, then use your
choice of the quantity of the meat.
Place all the chicken, the spicy bag, and
the vegetables in the instant pot. Add 14 cups of water and close the lid. Use
the pressure function and time for 20 minutes. After it is done cooking let it
naturally release.
Drain and discard all the solids. Pour the
broth back into the instant pot.
Turn to the broth function. Adjust the
seasoning at this time with sugar, fish sauce, and chicken powder. The Pho
broth is now ready to serve.
To assemble the bowl of pho:
Cook rice noodles following the directions
on the package.
Slice the chicken thinly.
Place noodles in the serving bowl, top with
chicken and sliced onions and chopped green onion and cilantro. Pour the hot
broth over.
