Easy Sour Fish Soup

When I like to have a good spicy hot soup, I like to use this recipe. It follows the same method to make Vietnamese sour fish soup. This is a quick way to enjoy a Vietnamese sour fish soup using a salmon fillet. For people who live far from an Asian grocery store, most of the ingredients are available in many grocers like Costco, Safeway, Albertsons, etc. This soup is good for dinner with rice or rice noodles or as an appetizer.

Directions:
2 salmon or tilapia fillets
6 cups broth, such as kelp, chicken broth, or water
1 tomato, cut into pieces
1 cup celery slices
1 cup pineapple, cut into pieces
1 cup Okra
3 tbs tamarind juice or lemon juice
2 tbs fish sauce
2 tbs sugar
2 cups bean sprouts
1/2 cup total of fresh chopped basil, cilantro, and green onions
Fresh hot chili pepper

Directions:
Cut salmon or tilapia fillets into bite-size pieces.
Bring stock to boil. Add lemon juice or tamarind juice .Bring new sour taste stock to boil. Add pineapple, celery, okra and fish. Cook for a few minutes. Add tomato. Season with fish sauce and sugar and then bring back to boil. Simmer for 5 minutes
Place bean sprouts in serving bowls and divide soup. Top with fresh herbs and hot chili.
