Stewed Chicken with Baby Portobello Mushrooms (Gà Kho Nấm)

Mushrooms of all kinds are very healthy, and most people do not know the magical benefits of eating mushrooms. Some mushrooms are very expensive, but many more mushrooms are quite affordable, such as white button or portobellos, which are slavery little small brown color mushroom with hearty flavor. One good thing about mushrooms is that they have very few calories, but provide good protein and fiber. The mushroom is not just low in calories, but also it is a fat burner as well. Some studies show that by eating mushrooms every day, our body will have enough vitamins, C, D, B6, and B12 to improve the immune system. Another health benefit from the mushroom is that it helps to lower bad cholesterol. With all the good things from mushrooms, I will now introduce an easy recipe will make everyone happy. Gà Kho Nấm is a Vietnamese dish, and I make it with a few changes, so it is more flavorful and less salty.

Ingredients:
Two chicken breasts, cut into big pieces
½ lb. baby portobello mushrooms
 1 tsp five spice powder
2 cloves garlic, minced
1/2 cinnamon stick, about 1 inch lenght
1 cup onions, chopped
1 tsp Cayenne powder or dry chili
2 tbs peanut oil
Sauce ingredients:
1 cup coconut water
1 tsp sugar
1 tsp honey
2 tbs soy sauce
2 tbs sweet chili sauce
1/4 tsp salt
1/4 tsp black pepper

Garnish with green onions, cut into 2 inch lengths
 
Directions:
Combine sauce ingredients and set aside.
Use paper towel to wipe mushrooms clean
Heat oil in a heavy pot. Stir fry garlic, five spice, cinnamon stick, cayenne pepper, and onions until fragrant.




Add chicken and mushrooms.

Stir fry chicken and mushrooms to absorb some of the spicy flavor. Add sauce and bring to boil.
 


Cover and cook over medium heat for 20 minutes. Uncover, Adjust seasoning with more salt if needed; cook uncover for another 15 minutes. Add green onions; Stir, Serve with a bowl of hot cooked rice.
