Stir-frying is a fantastic way to bring out
the vibrant flavors and textures of vegetables. It's a cooking method that's
both quick and healthy, preserving the nutrients and colors of the ingredients.
The key to a great stir-fry is preparation; having all your vegetables cut and
ready to go makes the process smooth and enjoyable. The beauty of this dish
lies in its versatility; you can use almost any combination of vegetables you
have, making it perfect for using up leftovers or whatever is in season.
The stir-fry sauce is what ties everything
together. A combination of savory soy sauce, rich oyster sauce, and a hint of
sweetness from the sugar balances the flavors. Cornstarch is a crucial
ingredient as it thickens the sauce, giving it a glossy, appealing look that
clings to the vegetables. The seasoning mushroom powder adds an umami depth
that elevates the dish from good to great.
Once the vegetables are tender-crisp, the
sauce is poured over, and everything is tossed together until the sauce is bubbling
and has coated the vegetables nicely. The final touch of freshly ground black
pepper adds a subtle heat that complements the dish.
Serving the stir-fry is a moment of
delight. The colors are bright, the vegetables are perfectly cooked, and the
aroma is irresistible. Topped with a sprinkle of green onions and cilantro, the
dish is not only a feast for the eyes but also for the palate. It's a dish
that's both comforting and exciting, and it's sure to convince even the most
reluctant vegetable eater of the joys of a good stir-fry. It's a testament to
the fact that healthy eating doesn't have to be boring; it can be an explosion
of flavors and textures that delight the senses. Enjoy your stir-fried mixed
vegetables as a main course or as a side to a protein of your choice, and revel
in the goodness of home-cooked, nutritious food.
Ingredients:
You will need a combination of mixed
vegetables: broccoli, baby bok choy. carrots, shitake mushrooms, baby corn, and
red, and yellow pepper.
1/2 white onion
2 garlic cloves, minced
Stir-fried sauce ingredients:
1/2 cup water
1 tsp cornstarch
1 tsp oyster sauce
1 tbsp soy sauce
1 tsp seasoning mushroom powder
1 tsp sugar
1/2 tsp salt
1/4 tsp black pepper
Topping: chopped green onions and cilantro
Directions:
Cut off the tough stems from the green
broccoli; cut off each broccoli branch, then wash and drain. All of the
vegetables are washed and then cut into thin, bite-sized slices. Clean the
shiitake mushrooms and cut them into 2 or 3 equal parts, depending on your
preference. Remove the core and seeds from the bell pepper, clean it, and cut
it into small, bite-sized squares. You need about 4 cups total for 1 person
After peeling and washing onions, cut them
into small square pieces.
In a small bowl, combine all the sauce
ingredients and mix well.
Bring a pot of water to boil. Add 1/2 tsp
salt and sugar and 1 tbsp oil. Add all the vegetables and bring them back to
boil for several minutes. You can start adding carrots, then broccoli. Boil for
several minutes, then add the rest of the vegetables. Remove and drain.
Put the pan on the stove, add 2 tablespoons
of cooking oil, add the onion, and garlic, and sauté until fragrant, turning
slightly yellow.
Next, add the sauce to the pan and mix the
spices.
Finally, add the boiled vegetables to the
sauce and stir well so the vegetables absorb the spices evenly. When the
vegetables have absorbed the spices for about 2 minutes, then turn off the heat.
Sprinkle with green onions and cilantro. It
is ready to enjoy.
Tip:
The process begins with the aromatics –
garlic and onions, which are sautéed until fragrant, forming the flavor base of
the dish. Boil the vegetables with the harder vegetables like carrots and
broccoli, which are added first, as they take a little longer to cook. As
they start to soften, quicker-cooking vegetables like bok choy and baby corn
can join the mix.
