Squash
offers a variety of health benefits that make it a nutritious addition to your

bones and plays a crucial role in over 300 bodily processes,
supporting heart function. Squash is very low in carbs, high in fiber, and
packed with vitamins and minerals like potassium. Therefore, I would like to
share my favorite recipe for this wonderful fruit: squash porridge.
Remember to enjoy a variety of squash types, from
zucchini to butternut, to reap these health rewards.
Ingredients:
- 12 oz. peeled and seeded Kabocha squash
- 1/4 cup sweet rice
- 4 cups vegetable broth or water
- Salt, pepper, mushroom seasoning, sugar (to
taste)
Optional
Add-ins:
- Can of tuna
- Shrimp
- Ground meat (if you are not vegan)

into bite-sized pieces.

Place the squash,
sweet rice, and the rest of the ingredients in an instant pot.
