Coconut & Chia Seeds Muffins

Since chia seeds have become quite popular for their nutritious benefits, I created this recipe to add these tiny, healthy seeds into my daily diet. I know that I can still enjoy food and stay healthy at the same time.
Ingredients:
1 cup muffin mix
1/3 cup nonfat yogurt
2 tbs sugar
1 egg
3 tbs chia seeds gel
1 cup shredded coconut
2 tbs melted coconut oil
1 tsp vanilla extract
1 tsp dry chia seeds for topping

Directions:
In a mixing bowl, combine egg, melted coconut oil, sugar, chia seeds gel, and nonfat yogurt. Whisk this mixture until fully combined.

 Add flour and beat for 20 strokes. Add shredded coconut and vanilla.

 Spoon this batter into prepared muffin tins.

 Sprinkle each muffin with dry chia seeds. Bake in preheated oven set to 350° for 20 minutes or until the tops are golden brown.
