Delicious Strawberry Muffins

I love to make every kind of muffins using muffin mix, which makes baking easier, faster, and less expensive.
Ingredients:
1 cup muffin mix*
1 egg
1 cup strawberries, cut up (with a few sliced for decoration)
1 tsp vanilla
2 tbs butter, softened
1/3 cup milk
2 tbs chia seeds gel
2 tbs sugar

Directions:
Preheat oven to 350°. Line 6 medium size muffin tins with muffin liners.
Combine the dry ingredient in a bowl and set aside.
In another mixing bowl using a handheld mixer, whisk the egg, sugar and butter until combined. Add milk and stir in the dry ingredients. Whisk this mixture for a few seconds. Add strawberries. Stir to combine. Scoop the batter into the muffin tin liners (2/3 full). Place 1 slice of strawberry on top of each muffin and bake in the preheated oven for 25 minutes .

*Quick mix: I use this quick mix recipe from http://chickensintheroad.com/ and I like the way the author Suzanne McMinn explains her way of cooking, very inspiring.
5 cups all-purpose Flour
1 cup milk powder
1/4 cup sugar
1/4 cup baking powder
1 1/2 tsp cream of tartar
1 tsp salt

I added 1 cup milk powder for my own taste.
