Easy Coffee Brownies

Everybody loves chocolate, and not many will refuse a piece of brownie when offered.
Ingredients:
1/2 cup butter, margarine or vegetable shortening
1/4 cup chia seeds gel
1/4 cup coco powder
1/4 cup chocolate chips
1 shot of espresso
3/4 cup sugar
2 eggs
1 tsp vanilla extract
1/4 tsp salt
1 cup all-purpose flour
1/2 tsp baking powder

Directions:
Preheat oven to 350°. Spray a baking pan with cooking oil and dust with coco powder.
In a bowl, combine flour, baking powder, salt and chocolate chips.
In a saucepan, melt the butter. Stir in coco powder and sugar until incorporated. Let cool for 15 minutes. Add chia seeds gel, espresso, vanilla and whisk in eggs. Stir about 10 strokes the dry ingredients into the wet ingredients. Do not overmix to prevent the brownies from becoming tough. Pour into the prepared pan and bake in preheated oven for 20 to 25 minutes or until a toothpick inserted into the center comes out clean. Let cool completely before cutting. Sprinkle with powdered sugar.
