Apple Cake

This moist tender apple cake can be served well as a dessert or breakfast. I cut the oil in half to reduce the fat and replace it with apple sauce. This comes out perfectly and is well received by friends and family. Of all the cake recipes that I have prepared, this has been my favorite.
Ingredients:
2 cups flour
1/8 tsp salt
2 tsp baking powder
3 cups (a combination of Granny Smith, Golden Delicious or Gala apples), peeled, cored and sliced.
2 eggs
1/2 cup oil or margarine
1/2 cup apple sauce
1 tsp vanilla
2 tsp cinnamo
1/4 tsp nutmeg
1 1/4 cup sugar
Directions:

Preheat oven to 350°. Butter the 10x10" baking cake dish.

Mix cut apple with 1/4 cup sugar, 1 tbs lemon juice, nutmeg and cinamon.

Combine the flour, salt and baking powder together. Set aside
In a mixing bowl, beat oil,eggs, and sugar until fluffy. Add apple sauce, vanilla. Beat well. Slowly beat the flour mixture with the egg mixture until combined. the batter will appear to be thick.

Pour haft of the batter onto the bottom of the prepare baking dish.

Add most of the apple in one layer. Pour the rest of the batter  cordinate with the rest of the apple.


 Use spatula to smooth the top of the cake, and bake in the preheated oven for 45 minutes or until  inserted toothpick comes out clean. Let cake cool and dust with powdered sugar or cover with cream cheese frosting.
