Grilled Tuna with Sun-Dried Tomatoes

This recipe uses oily-meaty fish like tuna or salmon, which are ideal when grilled or barbecued. The herb-buttered, sun-dried tomatoes add a depth of flavor to this dish and makes this one a number-one choice for barbecuing.
Ingredients:
Two 8 oz tuna fillets
1 tbs olive oil
1/4 cup sun-dried tomatoes
Salt and pepper
1/4 cup soft butter
1/2 tsp each fresh sage, thyme, oregano, parsley – chopped
1/2 tsp garlic, minced
1 shallot, minced

Directions:
To make herb butter, combine butter, garlic, shallot, sun-dried tomatoes, sage, thyme, oregano, and salt and pepper. Pulse in the food processor for 15 seconds, scraping down the sides of the processor bowl Remove the herb butter and refrigerate.
Sprinkle tuna on both sides with salt, pepper and olive oil.
Preheat the grill or barbecue. Place tuna on the grill or barbecue for 4 minutes on each side. Baste with the herb butter until the fish is done.  Serve on a bed of grilled onions.
