Carrot Yeast Bread

Making this carrot bread using the bread machine is so simple. Adding vegetables to our daily diet is very healthy. The sweetness of carrots and a hint of cinnamon perfume the kitchen while baking. Carrot bread is a special treat during holiday seasons and certainly replaces boring white bread.

Ingredients:
3/4 cup warm water
1 cup carrots, shredded
1 egg
2 tsp brown sugar
1 tsp cinnamon powder
1 tsp salt
2 tbs milk powder
2 tbs oil or margarine
3 cups bread flour + 3 tbsp flour more, if needed
2 tsp active dry yeast

Directions:
In a bread pan machine, add all the ingredients as listed in the order above, or you can follow your bread machine instruction manual. Choose the bread dough button. Press start. The bread machine will mix, knead and rise the dough. After the dough has risen for the first time, remove dough from the bread pan machine.

Lightly spray vegetable oil into an 8" x 5" loaf pan. Shape dough to the same size as the loaf pan and drop into the loaf pan.

Cover with kitchen towel. Let dough rise for 40 minutes or until it doubles in size. Bake in preheated oven 350° for 35 minutes. If the bread is not ready to bake, cover and put in the refrigerator overnight. Bring the bread out in the morning and let it warm up for 30 minutes before baking.
