Banana Coconut Muffins

Bananas and coconut pair together very well. Together, they provide a tropical flair. This recipe is guaranteed to bring a smile to every face.
Ingredients:
1 cup muffin mix
1/4 tsp ground cinnamon
1 egg
1/3 cup coconut milk or whole milk
3 tbs sugar
2 tbs oil or soft butter
1 cup bananas, mashed
Strudel topping
1 tbs all-purpose flour
2 tbs cut cold butter
2 tbs brown sugar
1/4 cup sweet coconut flakes

Directions:
Combine strudel topping ingredients in a bowl.
Mix flour and cinnamon in a mixing bowl.


Line 7 medium-size muffin tins with paper cups.

In a mixing bowl, whisk egg, oil, and sugar until fluffy. Beat in flour mixture. Add in mashed bananas and whisk to combine.

 Scoop the batter into each muffin cup to about 2/3 full.

Fill all the way up with the strudel topping.

Bake in preheated oven set to 350° for 25 minutes.
