Best Ever Coconut-Carrot Bread

Forcing children to eat their vegetables will not be necessary because this simple sweet bread will make them beg for more.
Ingredients:
1/2 cup coconut milk or regular milk
1 egg
1/2 cup carrots, finely chopped
1/2 cup shredded coconut flakes
1 tsp salt
1 tbs honey
1 tsp ground cinnamon
2 tbs soft butter or oil
2 cups bread flour + 3 tbs more, if needed
2 tsp active dry yeast

1/4 cup raisins for decoration

Directions:
Place all the ingredients listed above, except the raisins, in a bread pan machine. Select the dough setting, and press start. When the machine is finished with its first cycle of mixing, kneading, and rising, turn the bread machine off. Remove the dough from the bread pan and place it onto a floured countertop.

Gently roll and stretch dough into an 18 inch rope.
Grease a round 10" x 10" cake pan. With a sharp knife, divide dough into 12 pieces.

 Roll each piece into a ball. Place into cake pan.

Cover with a towel and let rise in a warm place for 40 more minutes or until the dough doubles in size.

 Bake in a preheated oven set to 350° for 20 to 25 minutes or until top is lightly brown.
