Carrot Rasin Salad with Citrus Dressing

Ingredients: 1/2 cup fat-free sour cream
1/4 cup skim milk
1 tbs honey
1 tbs orange juice
1 tbs lemon juice
1 tbs orange zest
1/4 tsp salt
4 medium carrots, peeled and shredded (about 2 cups)
1/4 cup raisins
1/4 cup chopped pistachio nuts

Directions:
To make dressing:
Combine sour cream, milk, honey, orange juice, lemon juice, orange zest and salt in a bowl. Blend well and set aside.



Combine carrots and raisins in a large bowl. Pour dressing on top. Toss to coat. Cover and refrigerate for 30 minutes. Top with nuts before serving.
