Coconut Muffins

I like to dress up my muffins with different fruits, and now I will use sweet coconut flakes for this recipe. The crunchy strudel topping and coconut milk make these muffins extra special.
Ingredients:
1 cup homemade muffin mix
1/3 cup coconut milk or regular milk
2 tbs sugar
1 egg
1/4 cup sweet or unsweetened coconut flakes
2 tbs oil or soft butter
1 tsp vanilla
Strudel topping
1/4 cup sweet or unsweetened coconut flakes
2 tbs sugar
1/4 tsp ground cinnamon
2 tbs soft butter

Directions:
Preheat oven to 350°. Line muffin tin with 6 medium-size muffin cups.

Combine muffin mix with 1/4 cup coconut flakes and set aside.

In a mixing bowl, whisk the egg, sugar and soft butter until fluffy. Stir in muffin mix. Add vanilla.

Spoon the batter into the prepared muffin cups (about 3/4 full) and cover with strudel topping.

Bake in the preheated oven for 25 minutes.
