Potato Pancakes

This simple potato pancake is easy for a quick breakfast, and just about any ingredient can be used, including red peppers, green bell peppers, zucchini or green onions. 
Ingredients (serves one):
2 medium-size potatoes, peeled,
1/2 cup all-purpose flour
1/4 tsp salt
1 tbs oil
3 green onions (just the green part cut into 3 inch lengths)

Directions:
Grate the potatoes into a medium-size bowl. Quickly add flour and salt. Stir to mix.

Heat a nonstick sauté pan. Add oil. Pour 1 cup of batter into the hot pan, creating a 5 inch circle (about 1/4 inch thick).

 Top with green onions. Pan fry over medium heat for about 1 minute or until the bottom turns brown.


 Using a spatula, flip pancake over and add a little more oil to prevent the pancake from sticking. Continue cooking until the pancake is golden brown on both sides. Serve hot with sweet soy dipping sauce
