Dried Salmon (Ruoc ca Hoi)

Before the refrigerator was invented, people had to learn how to keep food safe and to have enough food available when disasters happen. People learned that removing the water from foods kept them edible for a long time. Certain foods, such as fruits, could be dried under the sun. Other foods, such as meats or seafood, could be dried on a stove.. Most Asians love dried tuna or salmon and always have different ways of preparing dishes with these dried fish.. I have tried them all and finally came up with this recipe, which I think is the most budget friendly and delicious
Ingredients:
4 cans of Alaskan salmon, 14.75 oz. cans,, drained
2 tbs mushroom seasoning
2 tbs fish sauce
2 tbs soy sauce
1 tbs sugar
2 tsp salt
3 tbs black pepper
2 tbs hot chili flakes

Directions:
Place all the ingredients into a large sauté' pan over extremely low heat. Stir occasionally until it dry, about 2 hours.
