Cod Tikka Marsala

Tikka is chunks of meat or fish marinated in creamy sauce like yogurt or cream with spices. It is a popular dish in the Indian cuisine. There are no standard recipe ingredients for the preparation of Tikka Marsala, except the meat or fish in the dish. The ingredients making up the sauce usually include garlic, ginger, and shallot paste blended with tomato paste, yogurt or heavy cream. Marsala is a mixture of spices, such as turmeric, paprika, chili powder, cumin, garam marsala and coriander. My Tikka Marsala is prepared for my own taste and uses the ingredients that are available in my pantry because they can never be the same as other Tikka Marsala recipes. Therefore, everyone can explore various recipes to find the right one for themselves. I found mine.
Ingredients:
Two 8 oz Cod or Salmon
1/4 cup red onions thinly sliced
1 tsp each ginger, garlic
1 shallot, cut up
Marsala sauce
1/2 cup nonfat yogurt
2 tsp tomato paste
1/4 cup water or chicken stock
Spicy mixture
1 tsp each: turmeric, paprika, cumin, ground coriander, clove, cinnamon, chili powder, garam marsala (optional), salt and black pepper
Garnish with chopped green onions and cilantro.
Serve with steamed rice or naan bread (Indian flat bread).
Directions:
Sprinkle fish with salt and black pepper. Drizzle with 2 tbs oil. Set aside
In a food processor, grind garlic, ginger, and shallot into paste. Add together the spice mixture, tomato paste and yogurt.

In a nonstick skillet over high heat, add fish and let cook on both sides of fish (5 minutes).

Remove fish and break fish into chunks.
In the same skillet, add 1 tbs butter, red onions, ginger, garlic and shallot paste.

Stir this mixture until fragrant.

Add marsala sauce and bring to boil.

Pour fish back into the sauce and simmer for 5 minutes.




Sprinkle with green onions and cilantro.
