Okara Chocolate Muffins

I have a lot of okara (soy pulp) remaining after making soy milk with a soymilk machine. Therefore, making muffins for breakfast makes sense to me. It is quite simple to make because my pantry always has muffin mix that makes the job much easier, and the results are so fantastic.
Ingredients:
1 cup muffin mix
1/2 cup okara (soy pulp) drained, but not soggy
1 egg
2 tbs coco powder
1/2 cup chocolate chips
1/4 cup sugar
1/3 cup almond milk
1 tbs vegetable oil
2 tbs chia seed gel*
1 tsp vanilla

Directions:
Preheat oven set to 350°. Line 7 medium-size muffin tins with paper muffin cups for easy clean up.




Combine muffin mix, coco powder, and chocolate chips. Set aside.
In a mixing bowl, whisk sugar, egg and oil. Add okara and mix well.

 Scoop batter into muffin cups, 3/4 full. Bake in oven for 25 minutes.
