Quick Anchovie -Fried Rice

In some restaurants, fermented, salty fish is being used to prepare this dish, but the salted fish is too salty for my taste. I find the flat anchovy fillets in a 2 oz can is a good substitute for this fried rice recipe and much healthier.
Ingredients:
3 cups cooked brown or white rice (day old)
1 beaten egg
One 2 oz can of flat anchovy fillets in olive oil
2 cloves garlic, coarsely chopped
1 tsp red pepper flakes
1/4 cup red chopped onions
2 green onions, chopped
1/4 cup chopped carrots
1/4 cup peas (optional)
1 tsp black pepper
1 tsp soy sauce*
2 tbs oil

Directions:


Remove anchovies from its oil. Save oil for stir frying.
In medium size wok, heat oil. Add garlic, red pepper flakes, and onions. Sauté' until fragrant.

 Add carrots and cook for another 2 minutes. Add beaten egg. Turn heat down. Using a spatula, scramble egg.



Add anchovy fillets and mix together. Move this mixture off to the side of wok.
 Add the anchovy oil. Turn heat up and add rice.

 Continue to cook rice for 3 minutes. Add green onions and move back the anchovies-egg mixture
with rice.

Add soy sauce*, black pepper and serve.

*Soy sauce is usually not necessary because anchovies are already salty.
